Crema Bariloche is a decadent blend of dulce de leche and rich chocolate ganache, combining caramel notes with deep cocoa flavor.

The medialunas are filled after they are baked and glazed, not before. Filling a laminated pastry before it goes in the oven steams it from the inside; filling it afterwards keeps the outside crisp and the syrup glaze intact.

These are sweeter than the plain ones, so one or two is usually plenty per person. If you are ordering for people who have never had a medialuna, the caja mixta puts these next to the plain ones in the same box. Keeping them
Sealed at room temperature, and eat them the day they are baked if you can — the filled ones are happiest on day one. Do not refrigerate.
Warming them up
Oven at 325°F for three minutes. Warm rather than hot: dulce de leche gets very hot very quickly.

What is dulce de leche?

A caramel made by cooking milk and sugar together slowly for several hours until it thickens and darkens. It is sweeter and milkier than a butter caramel, and it is the classic Argentine pastry filling.

Are they filled before or after baking?

After. The medialuna is baked and glazed first, then filled, which is what keeps the pastry crisp instead of steaming it from the inside.

Are they very sweet?

Sweeter than the plain ones, yes. One or two per person is usually enough, and they go better with black coffee than with anything else sweet.

Can I have a mix of flavours in one order?

Yes — order the caja mixta, which puts the plain and the filled ones in the same box, or add more than one product to your order.

How long do they keep?

Best on the day they are baked. Sealed at room temperature they are still good the next morning; they do not improve in a fridge.
